Super Supper Saturday (because I always forget about Foodie Tuesday)

Okay, you of heathen, mayo hating heathens...  put up or shut up!

You are hereby CHALLENGED to post a recipe for tonight's supper!

It needs to be simple, tasty and UNIQUE!


Here is "ours":

Minion's Chicken Surprise, Served with Veggie Rice!


3 Pounds Chicken thighs, About 6-8

2 Tablespoons Olive Oil

2 Teaspoons Salt

2 Teaspoons Garlic Powder

2 Teaspoon Onion Powder

3 Tablespoons Knorr Tomato Bouillon*

3 Tablespoons Knorr Beef Bouillon*

(* can be replaces with 6 Tbls. of Knorr Oxtail Soup mix if you can find it)

2 Cans Coke Classic

1 Cup Grated Carrots

1 Cup Shredded Cabbage

1 Clove Minced Garlic

1 Tablespoon Salt

2 Tablespoons Olive Oil

2 Cups Rice

2 Cups Water


1.  Combine Salt, Garlic Powder, Onion Powder and both Bouillons together in a large mixing bowl.

2.  Add chicken and use mixture as a "rub" until all pieces are coated.

3.  In a cast iron Dutch oven (if you don't have one stop being a dumbass and go buy one, ffs!) add the olive oil and chicken and brown until chicken juices run clear.

4.  Reduce heat to simmer and SURPRISE!!!! you pour the Coke over the chicken (SERIOUSLY!) and throw any remaining rub on top.

5.  Cover and allow to simmer for 15 - 20 minutes.

1.  Add Grated Carrots, Shredded Cabbage, Minced Garlic, Salt, Olive Oil, Rice and Water to your automatic rice cooker.  (If you don't have one see comments within parentheses above.)  

2.  Cook until it goes DING! (...and no...  I have no idea how freakin long that is.)

The net result is an easy, quick and delish chicken dish with a WONDERFUL rich gravy that is totally fab served on top of colorful, tasty rice.


P.S.  The person (this competition is gender neutral so guys can "BRING IT!" too) who gets the most compliments for their recipe gets to wear the famed FOODIE QUEEN/KING of OS Tiara for the next week.

If I ate chicken this sounds like it would be some good comfort food! I had leftovers tonite–cauliflower and goat cheez ravioli with roasted garlic ginger sweet potatoes...pretty tasty. I'm not a great cook though, don't have any recipes, just throw together things that taste good. I tend to cook better on weekends. On work nites I get home after eight, so Sundays I make a crock pot full of soup then heat that up school nites. Last week's soup was really lentil, chick peas, spinach, leeks and a rice mix–brown, red, and wild. Prolly this won't win me a tiara though. Where are the mens tonite? We skeer them off?

PFFFFFT!  I was GOING to award you the first place Tiara, but after wishing good, wholesome mayo was watery, white Cheezwizz?  NOPE!!!!   DISQUALIFIED!   EJECTED FROM THE GAME AT THE POINT OF THE FOUL!!!  REPORTED TO GOD (who is a BIG mayo fan, btw)!!!!

That also leaves me with a dilemma.  There are only two other entries besides mine...  one from a disqualified mayo hater and the other from a person who eats things a self-respecting goat wouldn't eat.  So that leaves ME!

The problem with that is that I got the damn tiara from some old lady and, besides being used, it looks kind of cheap and has WAAAAY too damn many fake rhinestones for my taste.

Here a picture of the old bag wearing the subject tiara.  What do you think???

Amy I think you should rightly have the tiara. Queen Elizabeth, although I imagine she is not a fan of mayo, gave it to you.

I am trying to imagine her Majesty eating that hot dog though……

I missed it!

.....oh well. 

I did make a homemade veggie pot pie last night for dinner... but that was Sunday and I supply no recipe or photos so I guess I'm out.  ; )  It was not pretty but did taste delish.

There was no mayonnaise in sight.

(Mayo *only* shows up for deviled eggs on Easter. Once a year is enough... and yes, I think serving deviled eggs on Easter is rather funny.))

Your recipe sounds great! .....I'd just swap out chicken for tofu and nix the oxtail and beef!!!!!!!!  (Oxtail???? Oh gawd.)
