Super Supper Saturday (because I always forget about Foodie Tuesday)

Okay, you of heathen, mayo hating heathens...  put up or shut up!

You are hereby CHALLENGED to post a recipe for tonight's supper!

It needs to be simple, tasty and UNIQUE!

BRING IT BEOTCHES!

Here is "ours":

Minion's Chicken Surprise, Served with Veggie Rice!

Ingredients


3 Pounds Chicken thighs, About 6-8

2 Tablespoons Olive Oil

2 Teaspoons Salt

2 Teaspoons Garlic Powder

2 Teaspoon Onion Powder

3 Tablespoons Knorr Tomato Bouillon*

3 Tablespoons Knorr Beef Bouillon*

(* can be replaces with 6 Tbls. of Knorr Oxtail Soup mix if you can find it)

2 Cans Coke Classic

1 Cup Grated Carrots

1 Cup Shredded Cabbage

1 Clove Minced Garlic

1 Tablespoon Salt

2 Tablespoons Olive Oil

2 Cups Rice

2 Cups Water

Instructions

1.  Combine Salt, Garlic Powder, Onion Powder and both Bouillons together in a large mixing bowl.

2.  Add chicken and use mixture as a "rub" until all pieces are coated.

3.  In a cast iron Dutch oven (if you don't have one stop being a dumbass and go buy one, ffs!) add the olive oil and chicken and brown until chicken juices run clear.

4.  Reduce heat to simmer and SURPRISE!!!! you pour the Coke over the chicken (SERIOUSLY!) and throw any remaining rub on top.

5.  Cover and allow to simmer for 15 - 20 minutes.

1.  Add Grated Carrots, Shredded Cabbage, Minced Garlic, Salt, Olive Oil, Rice and Water to your automatic rice cooker.  (If you don't have one see comments within parentheses above.)  

2.  Cook until it goes DING! (...and no...  I have no idea how freakin long that is.)

The net result is an easy, quick and delish chicken dish with a WONDERFUL rich gravy that is totally fab served on top of colorful, tasty rice.

P.S.  The person (this competition is gender neutral so guys can "BRING IT!" too) who gets the most compliments for their recipe gets to wear the famed FOODIE QUEEN/KING of OS Tiara for the next week.

If I ate chicken this sounds like it would be some good comfort food! I had leftovers tonite–cauliflower and goat cheez ravioli with roasted garlic ginger sweet potatoes...pretty tasty. I'm not a great cook though, don't have any recipes, just throw together things that taste good. I tend to cook better on weekends. On work nites I get home after eight, so Sundays I make a crock pot full of soup then heat that up school nites. Last week's soup was really good...red lentil, chick peas, spinach, leeks and a rice mix–brown, red, and wild. Prolly this won't win me a tiara though. Where are the mens tonite? We skeer them off?

I'm winging this:

I like lamb - any cut, shoulder, shanks (especially good),a hunk of boneless leg. So figure a half pound per person or one shank per... Big cubes if your using shoulder or leg. 

Garlic cut into slivers

Cut into the meat and stuff the garlic Deep in it.

Season w salt/pepper

put the meat uncovered into the fridge to dry out for a few hours

use best olive oil and brown the meat med/high heat.  Not cooking yet, just sealing the juices in. 

Next stage can be stove top or dutch oven or slow cooker or pressure cooker

Lower the heat, squeeze a lemon over the meat, then cover w dry white wine, throw in a bay leaf or two, some parsley maybe fresh thyme if you have and let it simmer. Low and slow. 

Taste for seasoning after an hour or so.

two hrs of cooking usually does the trick. If its shanks... Cook until they start to fall apart

Oh cook tightly covered. Last half hour uncover to let the juices thicken. at any point if it starts to dry out addchicken stock or water.
